When I feel to resort to healthy living this is a recipe I use fro breakfast....
2 eggs in medium size fry pan. Season with a little salt and black pepper
After 2 mins when 75% done, top with cooked spinach. Let finish cooking Serve as omelet. It delicious and nutritious.

I use spinach to make calalloo, and yes, I too put coconut milk in it.

Bragging? Okay if you say so but I was just trying to share the taste, smell and flavour.

And hopefully some might think about growing the different spinach
